Jet Lag Is Two Problems, Not One
The first is dehydration. Cabin air is drier than most deserts, sitting still for hours reduces circulation, and people drink less water and more alcohol and coffee than usual on a plane. When to Book It
Timing changes how much you get out of it.
On arrival, same day. The most common and the most useful. You land, a nurse comes to the hotel, and you reclaim the first day rather than writing it off. Best if you have something the next morning that matters.
Before a long flight. Some people book to travel well hydrated. There is sense in starting from a better baseline, though you cannot store fluid, so the effect is smaller than arriving and treating actual depletion.

What is the fastest way to cure jet lag?
There is no cure, only a faster adjustment. Daylight at the right time of the local day is the strongest lever, with meals and sleep on local time behind it. Rehydrating removes the symptoms that are dehydration rather than clock misalignment, which is the part an IV handles.
Is it beneficial to get an IV drip before a flight?
Mildly. Arriving well hydrated is better than arriving dehydrated, but you cannot store fluid, so pre-flight is less effective than treating the depletion after you land.
Can drinking liquid IV help with jet lag?
